In baseball, how come pitchers dont throw underhand sometimes to change it up?

Because under hand motion is totally different than over hand pitching,you usually spend a tremendous amount of time to learn a certain pitching style, and perfect it.And you cant get the same amount of speed on the ball throwing underhand as you can overhand.
